Homemade Blueberry Galette

This Homemade Blueberry Galette is paired with a lactose free lemon cream cheese frosting, and made with flaky pie dough from the cook book “Book of Pie” making this a perfect treat for any occasion!

I know I’ve said this before but pairing lemon and blueberries have been ABSOLUTELLLYYY heaven for me!

This galette recipe is easy to put together! First, you will need to make the pie dough. You can find the recipe here. Next, flatten the pie crust, add lemon cream cheese then top with blueberries. Finally, bake for thirty minutes or until the crust begins to brown. You can serve this delicious galette either on its own or top it off with some delicious vanilla ice cream.

What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Which Ingredients Are Lactose Free?

Cream Cheese – I used lactose free cream cheese.

Butter – I used Lactantia lactose free butter

What Is A Galette?

I am so glad you asked!

A galette is a round pastry that is baked on a baking sheet and is filled with delicious fruit desserts.

Why You Will Love This Homemade Blueberry Galette:

Recipe At A Glance:

Flour: You will need flour for the pie crust and extra for the blueberry filling.

Lemon: Lemon Juice and lemon zest off one lemon will be needed.

Blueberries: Will be needed for the galette.

Butter: Lactose-free room temperature butter is needed for the lemon cream cheese frosting

Cream Cheese: Lactose-free cream cheese will be needed for the lemon cream cheese frosting.

Salt: For taste.

Vanilla Extract: For taste.

Powdered Sugar: For the cream cheese lemon frosting.

Egg: 1 egg is required for the egg wash.

Milk: 1 tsp is needed for the egg wash

Vegetable Shortening: Is needed for the flaky pie crust. I used Crisco.

Equipment Needed:

Mixing Bowl: You will need at least two mixing bowls. One for the blueberry filling and one for mixing your pie dough.

Pastry Blender: For mixing and blending your pie dough.

Juicer: To juice your lemon.

Zester: To zest your lemon.

Kitchen Scale: For measuring in grams. Trust me, it is more accuarate!

Spatula: For mixing your frosting

Stand Mixer: For your cream cheese lemon frosting.

Mixing Spoon: For mixing your blueberry filling.

Measuring Spoons: For measuring your tsp and tbsp. ingredients.

Cookie Sheet: For the galette to bake on.

Parchment Paper: To bake the galette.

Step By Step Instructions:

Step One:

The pie dough!

To create the galette you will need to make the pie dough and chill for an hour or even better, overnight!

I found this pie dough recipe from the book “Book Of Pie” and I swear, it is not only my favourite cookbook, but this pie dough is SEEERIOUSLLY flaky!

In a mixing bowl add flour, salt and sugar. Mix using a whisk until all the clumps have disappeared.

Next, add vegetable shortening and butter. Using a pastry blender incorporate the butter and vegetable shortening into the flour.

Add chilled water, one tbsp. at a time and mix into the batter using the pastry blender. Once you have a smooth dough, create a ball and slice down the middle so you have two pie doughs.

Flatten each round of dough with your hand and wrap each one separately into saran wrap then either chill for at least one hour or overnight. I went with overnight!

When you are ready to roll out your dough, make sure it is thawed out first but still cold.

Step Two:

Cream cheese lemon frosting!

Using a stand mixer with the whisk attachment, add in soft lactose-free butter and whip on high until you get a creamy texture.

Next, Add in lactose-free room temperature cream cheese, salt, powdered sugar, vanilla extract, lemon zest and lemon juice.

Mix then set aside.

Step Three:

Blueberry Filling!

Preheat your oven to 350F

Grease a cookie sheet and add parchment paper on top.

In a mixing bowl, add blueberries, flour, lemon juice, lemon zest and sugar. Give the berries a quick mix then set aside.

Step Four:

Take your thawed pie dough and start rolling it out using a rolling pin.

Once you have a thin flat disc, carefully move your pie dough to your greased cookie sheet and start adding your cream cheese frosting to the middle of the dough.

Next, add your blueberry mix over top of the cream cheese frosting.

Lift the edges of the pie dough and fold into the middle, folding about every 4 inches as you go.

Step Five:

Lastly, in a small bowl add in your egg and 1 tbsp. of milk. Mix until combined.

Using a pastry brush, brush the egg wash over your pie crust and place into the oven for 30-40 minutes until the crust is browning and the blueberry filling starts to bubble.

Allow to fully cool before serving.

Storing And Freezing:

Leftovers? No problem! Wrap the Homemade Blueberry Galette loosely in aluminum foil and store in the fridge for up to two days. When you are ready to enjoy this heavenly galette again, simply warm the dessert in the microwave.

Frequently Asked Questions?

Can I use frozen blueberries instead of fresh blueberries?

Yes! You can either use fresh or frozen blueberries. Keep in mind that the frozen blueberries will release more moisture causing the galette to be more liquidy. If you are using frozen blueberries, try not to over pack the dough.

How can I prevent the bottom of the galette dough from getting soggy?

To prevent the bottom do the crust from getting soggy, add a sprinkle of flour to the bottom before adding your topping. The dry ingredient will absorb the liquid from the blueberries.

What can I serve the blueberry galette with?

You can serve the blueberry galette either on its own or serve with vanilla ice cream. Be sure to serve the galette warm!

Homemade Blueberry Galette Tips and Variations:

  • Use a combination of berries, such as, raspberries, strawberries and blueberries.
  • Add cinnamon to top off the blueberry galette.
  • Fresh or frozen berries worm fine. Just remember frozen berries have more liquid.
  • Do not over pack the pie dough as you don’t want the berries to ooze out of the crust.
  • To keep the bottom of the galette from getting soggy, sprinkle some flour or oats to the bottom before adding the blueberries.
