What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Which Ingredients Are Lactose Free?

  • Zero! This recipe does not require any dairy

If you do not have a stand mixer, THIS IS OKAY. Simply just add the dry ingredients to a large mixing bowl and mix using a whisk to get rid of any lumps.

Step Four:

Once your yeast looks creamy, pour the mixture into the bowl with the flour and mix on low using the dough hook.

Creamy yeast

Step Five:

Once the dough is fully incorporated, cover with plastic saran wrap and top with a clean kitchen towel. Allow the dough to rise for at least 60 minutes or doubled in size.

Step Six:

Preheat your oven to 400°F and lightly grease your pizza pan with olive oil.

My favorite part!

Once the dough has risen, give the dough a light punch to remove any air bubbles, remove it from the bowl divide it in half then place on a clean surface to roll out.

If you are only making one pizza, divide the dough in half and freeze the second dough for a later time.

Step Seven:

Roll the dough out onto a clean floured surface. You want your dough to be about 1/2 inch thick. Once you have your circle, pinch the edges to create a thick crust, place the dough on a circular cooking sheet then cover with a clean kitchen towel and allow the dough to rest for about ten minutes.

Step Eight:

Add pizza sauce and your favorite topping and place into the oven to bake for 15-20 minutes or until the crust is golden brown.

Serve and enjoy!

Tips And Variations:

  • This pizza dough recipe makes two 12 inch pizzas. If you only want to make one pizza, simply freeze the second dough AFTER it has risen ( see step five.) Place the second dough in a zip lock bag, release all the air and place in the freezer for up to three months.
  • Allow the yeast to fully bloom before adding it to the flour mixture or your dough may not rise.
  • Allow the dough to rest after mixing for at least ten minutes.
  • For a crispier pizza crust, you can lightly dust your pizza pan with corn flour.

Crafting the ideal pizza dough is an art form that requires patience, attention to detail, and a passion for perfection!!! Would I say I am there, not quite. But my bank account is a lot happier …. The price of pizza these days … HELLO!!!
