Preheat your oven to 350F
Grease your muffin tray with cooking oil or spray. I like to use canola oil.
Gather all your ingredients, measure everything then set aside.
In a mixing bowl, add flour baking powder, salt and chocolate chips. Mix together using a whisk to get rid of any lumps.
In the same bowl, add eggs, honey, vanilla extract and sour cream.
Mix together using a handheld mixer. Do not over mix the batter
Grab your greased muffin tray and scoop the muffin batter into the tray. Fill the muffin tray about two-thirds full. This will allow the muffins to rise evenly
Place the muffin tray into the oven and bake at 350F for ten minutes before dropping the temperature down to 325F and continue to bake for another twenty minutes.
Poke the center of the muffin with a toothpick. If the toothpick comes up clean, your muffins are done. If the toothpick comes up dirty, continue to bake until done.
