Equipment

  • Spatula
  • Measuring spoons and cup
  • Mixing Bowl
  • Small Bowl
  • Handheld Mixer
  • Whisk
  • Jumbo Muffin Tray
  • Cooking Spray
  • Ice Cream Scoop

Ingredients

  • 2 Eggs
  • 1/2 cup Honey
  • 1 1/2 cups Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 cup Sour Cream lactose free
  • 1 tsp Salt
  • 1 tbsp Vanilla Extract
  • 2 cups Chocolate Chips

Instructions

  • Preheat your oven to 350F
  • Grease your muffin tray with cooking oil or spray. I like to use canola oil.
  • Gather all your ingredients, measure everything then set aside.
  • In a mixing bowl, add flour baking powder, salt and chocolate chips. Mix together using a whisk to get rid of any lumps.
  • In the same bowl, add eggs, honey, vanilla extract and sour cream.
  • Mix together using a handheld mixer. Do not over mix the batter
  • Grab your greased muffin tray and scoop the muffin batter into the tray. Fill the muffin tray about two-thirds full. This will allow the muffins to rise evenly
  • Place the muffin tray into the oven and bake at 350F for ten minutes before dropping the temperature down to 325F and continue to bake for another twenty minutes.
  • Poke the center of the muffin with a toothpick. If the toothpick comes up clean, your muffins are done. If the toothpick comes up dirty, continue to bake until done.
