First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Recipe At A Glance:

Eggs: You will need two eggs at room temperature.

Honey: You will need half a cup of honey. I used bee maid honey brand.

Flour: You will need one and a half cups of all purpose flour.

Baking Powder: You will need 1 tsp.

Baking Soda: You will need 1/4 tsp.

Sour Cream: You will need half a cup.

Salt: 1 tsp of salt.

Vanilla Extract: One tbsp. for taste.

Chocolate Chips: Two cups of chocolate chips.

Step By Step Instructions:

Step One:

First, Preheat your oven to 350F

Grease your muffin tray with cooking oil or spray. I like to use canola oil.

Gather all your ingredients, measure everything then set aside.

Step Two:

In a mixing bowl, add flour baking powder, salt and chocolate chips. Mix together using a whisk to get rid of any lumps.

Step Three:

In the same bowl, add eggs, honey, vanilla extract and sour cream. Mix together using a handheld mixer.

Mix just enough for the batter to be fully incorporated. Try not to over mix the batter.

Step Four:

Grab your greased muffin tray and scoop the muffin batter into the tray. Fill the muffin tray about two-thirds full. This will allow the muffins to rise evenly

Step Five:

Place the muffin tray into the oven and bake at 350F for ten minutes before dropping the temperature down to 325F and continue to bake for another twenty minutes.

Step Six:

Finally, poke the center of the muffin with a toothpick. If the toothpick comes up clean, your muffins are done. If the toothpick comes up dirty, continue to bake until done.

Leftovers? No problem! Allow the Jumbo Chocolate Chip Muffins to cool completely before wrapping them individually and storing in an airtight container. These muffins can last up to four days in the fridge. If you decide to freeze the chocolate chip muffins, wrap each one individually with saran wrap or tin foil and place them into a freezer bag or freezer safe container. These muffins can last up to three months in the freezer.

Ready to eat them again? Simply warm them in the microwave for thirty seconds. You can also thaw the muffins overnight in the refrigerator or thaw at room temperature for a few hours.
