What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Recipe At A Glance:

Heavy Lactose Free Whipping Cream: The main component to creating homemade whipping cream. You will need one cup.

Salt: For taste, You will need one tsp.

Powdered Sugar: You will need half a cup of powdered sugar.

In a mixing bowl, add in heavy cream and mix until the liquid turns into a thick mixture. The goal here is to achieve stiff peaks!

Once you have a thick mixture, add in your salt, vanilla extract and powdered sugar. Give it a quick mix and serve over top any type of pie, or cream puff!

Storing And Freezing:

Leftovers? No problem, transfer your homemade whipping cream into an airtight container and store in the fridge for later use. Homemade whipping cream is good up to 3 days.

Do not store homemade whipping cream in the freezer, as it can get grainy and icy when thawed.

Go for heavy cream or whipping cream with a high fat content. This will work best when making whipping cream.

How long should I whip the cream?

It can generally take between four to five minutes to achieve stiff peaks.

Can I overwhip the cream?

Yes! be sure to watch the cream. If you overwhip the cream it will eventually turn into homemade butter.

Homemade Whipping Cream Tips:

#1: Chill the bowl and and flat head beater in the freezer for about ten minutes. This will help the whipping cream beat faster and to a greater volume.

#2: Be sure to watch your cream closely, you want to achieve stiff peaks. Once you achieved this, stop whipping.

Serve right away or store in an airtight container.

Variations:

  • Try sweetening your whipping cream with maple syrup instead of powdered sugar.
