Ugh, the weekend is over and September is close to an end. This year just flew by! My husband and I took the kids to the zoo this weekend, we all had a blast. I don’t know if I am the only one but does anyone else get cranky after having too much sun? I was ready to call it a day after leaving the zoo, but of course, with energetic little peanuts like mine, resting was out the window.

It has been fairly warm here in Alberta this week, so baking was out of the question, however, I did make ice cream for my family and it was an absolute hit!

I was extremely proud of myself with this recipe!

You don’t need an ice cream maker to create creamy lactose free ice cream, all you need is an electric mixer, a mixing bowl and some patients!

Recipe At A Glance:

The nice thing about this homemade ice cream recipe is that it only requires five simple ingredients.

Heavy Whipping Cream: I used the lactose free option and went with the Natrel brand.

Sweetened Condensed Milk: For sweetness. Unfortunately I could not find lactose free condensed milk. I used one whole can.

Salt: For taste.

Vanilla Extract: For taste.

Oreo Cookies: I used about half the bag of original Oreo cookies.

Ziploc bag: To crush your Oreos in

Rolling Pin: For crushing your Oreo cookies.

Spatula: For mixing the ice cream


What Is Lactose – Free?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Reasons Why You Will Hate This Recipe:

There is really only ONE reason you will hate making homemade ice cream! Unfortunately, you will have to wait at least 24 hours before you can eat this creamy lactose free ice cream because it will have to freeze. But that’s it, I promise!


Step By Step Instructions:

Step One:

First, Gather all your ingredients and measure everything you need.

Crush your Oreo cookies using a Ziploc bag. Crush using a rolling pin then set aside.

Step Two:

In a mixing bowl add in two cups of heavy lactose free whipping cream. Using a hand mixer, blend the cream until you achieve stiff peaks.

Step Three:

Once you’ve achieved stiff peaks, add in sweetened condensed milk, salt and vanilla extract. Add in the crushed Oreos and fold into the heavy cream using a spatula.

Step Four:

Finally, Pour your homemade ice cream into a loaf pan and freeze overnight before serving.

Ingredients
  

  • 2 Cups Heavy Whipping Cream lactose free
  • 1 can Sweetened Condensed Milk
  • Crushed Oreos
  • 1 tbsp. Vanilla Extract
  • 1 tsp. Salt

Instructions
 

  • Gather all your ingredients and measure everything you need.
  • Crush your Oreo cookies using a Ziploc bag. Crush using a rolling pin then set aside.
  • In a mixing bowl add in two cups of heavy lactose free whipping cream. Using a hand mixer, blend the cream until you achieve stiff peaks.

Tips and Variations:

  • Because using a hand mixer may take some time for the whipping cream to thicken, using a stand mixer will get the job done MUCH faster.
  • I used lactose free heavy cream but feel free to use non lactose free heavy cream.
  • Salt and vanilla extract is optional.
  • Instead of purchasing a bag of Oreo cookies and having to crush them yourself, you can purchase Oreo cookies that are already crushed for you.
  • You can 100% play with this recipe. Instead of Oreo cookies you can add peanut butter cups
