Homemade Avocado Brownies

The Inspiration:
Baking has become one of the many ways where my kids and I can spend time together, it’s a way for us to communicate as a family. Now with that being said, baking is not the healthiest hobby ( who would have thought) and so I wanted to try and use healthier alternatives when baking – avocados brownies!
Homemade Avocado Brownies:
These Homemade Avocado Brownies are a delicious twist to traditional brownies. They are soft, moist AND packed with chocolate flavor.
This brownie recipe is incorporated with avocado and coconut oil making it a healthier fat alternative over butter and oil.
You will begin by adding avocado, coconut oil, and honey into a food processor or blender and blend until smooth. Next, in a mixing bowl, add cocoa powder, flour, baking soda, chocolate chips, and salt, mix the dry ingredients using a whisk to get rid of any lumps. Finally mix in the wet ingredients, including the avocado mix. Mix everything using a spatula, until fully incorporated, be careful not to over mix the batter. Place the brownie batter into the oven, bake for 25-30 minutes at 325F.
What Does Lactose Free Mean?
First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.
Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Recipe At A Glance:
Eggs: You will need two eggs at room temperature.
Honey: You will need half a cup of honey. I used Manuka honey!
Flour: You will need one and a half cups of all purpose flour.
Cocoa Powder: You will need half a cup. I used Hershey brand of cocoa powder!
Baking Soda: You will need 1/4 tsp of baking soda.
Salt: You will need one tsp of salt for taste.
Vanilla Extract: You will need one tbsp for taste.
Avocado: You will need one avocado.
Coconut Oil: You will need 1/4 cups of coconut oil melted.
Chocolate chips: You will need one cup of chocolate chips.

Step By Step Instructions:
Step One:
Preheat your oven to 325F
Grease your brownie tray.
Gather all your ingredients, measure everything then set aside.
Step Two:
In a food processor or blender, add avocado, honey, and coconut oil. Mix until smooth then set aside.
Step Three:
In a mixing bowl, add cocoa powder, flour, baking soda, chocolate chips, and salt. Use a whisk to mix the dry ingredients to remove any lumps.
Step Four:
Crack both eggs into the dry ingredients and mix.
Tip: crack the eggs in a separate bowl to avoid any shells falling into the batter.
Step Five:
Add the avocado mix to the brownie batter and mix using a spatula until everything is fully incorporated.
Tip: avoid over mixing the batter. Mix just enough until everything is fully incorporated.
Step Six:
Pour the brownie batter into a baking pan and place into the oven. Bake for about 25 minutes.
Tip: Use the toothpick method to check the readiness of the brownie.
Step Seven:
Insert a toothpick in the center of the baked brownie. You want the toothpick to come up somewhat “dirty” but not too much.
After about 25 minutes remove the brownies from the oven and allow them to cool COMPLETELY before serving.

Leftovers? No problem! Store these delicious avocado brownies in an airtight container and place in the fridge for up to two weeks. These Homemade Avocado Brownies can be stored in a freezer tight container as well, be sure to thaw the brownies at room temperature before eating.

Can I eat the brownies right out of the oven?
It is always better to wait for the brownies to COOL completely before devouring them. When using the toothpick method, you want the toothpick to come up a little “dirty” that way when you pull the brownies out of the oven they will continue to cook while in the pan, which is why it is better to eat the brownies after they have cooled completely.
What can I use as a sweetener instead of honey?
You can try maple syrup instead of honey. If you want to use granulated sugar, you will need to add one cup of sugar and one tsp of baking soda.
What does avocado do to the brownies?
The Avocado is a healthy fat and is a substitute for oil and butter. Most traditional brownies generally call for oil or butter (sometimes both) but since I went for a healthier alternative the avocado acts as a substitute for oil and butter.
Can you taste the avocado in the brownies?
Nope! You will not taste the avocado in the brownies.
What does coconut oil do to the brownies?
Coconut oil acts as a healthy fat and will add moisture to the brownies. You cannot taste the coconut oil in the brownies.
I don’t own a blender or food processor, what can I use instead?
Not a problem! Be sure to use ripe avocados and simply mash the avocado with a fork.

1. Use ripe avocados that are soft to the touch but not too mushy.
2. Avoid over mixing the batter.
3. Use a lower temperature when baking with honey.

Equipment
- 1 Spatula
- 1 Measuring spoons and cup
- 1 Stand Mixer or Handheld mixer
- 1 Whisk
Ingredients
- 3-4 cups Powdered Sugar
- 1 brick Cream Cheese
- 1 stick Butter
- 1 tsp Salt
- 1 tbsp Vanilla Extract
Instructions
- Be sure to have room temperature butter and cream cheese.
- Gather all your ingredients, measure everything then set aside.
- In a mixing bowl, add butter and mix until the butter is softened and has a bit of a white texture.
- In the same mixing bowl, add cream cheese and mix on high speed until both the butter and cream cheese have mixed together.
- Add the vanilla extract and salt.
- Add in the powdered sugar one cup at a time and mix until the powder is fully incorporated into the batter.
- Use a spatula and give the cream cheese frosting a nice mix, releasing any air bubbles.
