Homemade Reese’s Peanut Butter Ice Cream

This easy Homemade Reese’s Peanut Butter Ice Cream is made with lactose free heavy cream, does not require an ice cream machine, AND is loaded with delicious Reece’s peanut butter chocolate!

What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Which Ingredients Are Lactose Free?

  • Heavy Cream – I used Natrel lactose free brand.

Recipe At A Glance:

Heavy Cream: You will need two cups of lactose-free heavy cream.

Sweetened Condense Milk: One can is required for this ice cream recipe. The sweetened condensed milk will add sweetness to the ice cream.

Reese’s Peanut Butter Cups: You will need at least four of the three packs of chocolate.

Salt: One tsp of salt for taste.

Vanilla Extract: Two tbsp. for taste.

Stand Mixer or hand mixer: For mixing your ingredients.

Knife: For slicing the Reese’s peanut butter chocolate into small pieces.

Spatula: For mixing your whipping cream.

Loaf Pan: For you ice cream to freeze in.

Lactose Free Easy Homemade Reese's Peanut Butter Ice Cream

Step By Step Instructions:

Step One:

Chop the pieces of Reese’s Peanut Butter Chocolate and set aside.

Using a stand mixer, add in your lactose free heavy cream and mix until you get stiff peaks.

Whipping cream

Step Two:

Add condensed milk, vanilla extract, salt and chopped pieces of Reese’s Peanut Butter chocolate to the mix. Using a spatula, fold the added ingredients into the heavy lactose-free whipped cream.

Step Three:

Using a loaf pan, pour your ice cream mix into the pan and freeze overnight. Serve the Reese’s Peanut Butter ice cream the following day and enjoy!

Storing And Freezing:

Leftovers? No problem, keep the remaining homemade ice cream in the loaf pan and cover with aluminum foil before freezing in the freezer. Homemade ice cream can last up to one week.

Homemade Reese’s Peanut Butter Ice Cream Tips:

#1: Chill the bowl and and flat head beater in the freezer for about ten minutes. This will help the whipping cream beat faster and to a greater volume.

#2: Be sure to watch your cream closely, you want to achieve stiff peaks. Once you achieved this, stop whipping.

Variations:

  • Swirl melted chocolate into the recipe before freezing.
  • Drizzle salted caramel sauce over the ice cream for a sweet and salty contrast.
  • Mix in mini chocolate chips into the ice cream batter before freezing.
  • Chop pretzels and add to the ice cream mix before freezing.
