There’s something irresistibly refreshing about the zingy sweetness of lemon desserts, and this  delicious lemon loaf with a lemon glaze is no exception! Perfect for breakfast, dessert, or an afternoon treat, this loaf is moist, flavorful, and bursting with citrusy goodness!

This delicious lemon loaf is perfect for any occasion! It’s a classic dessert or snack that’s easy to make and universally loved. Often topped with a zesty lemon glaze, this loaf pairs wonderfully with tea, coffee, or as a light dessert to brighten your day.

First, you want to start by preheating your oven. Next, add the dry ingredients to a bowl and mix using a whisk before moving onto the wet ingredients. Once you’ve removed the lumps from the dry ingredients,  add in the wet ingredients and mix until combined. Add the lemon zest and lemon juice before giving it a final mix. Finally, add the lemon loaf to a loaf pan and cook for 25-30 minutes.

What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Recipe At A Glance:

Eggs: You will need three eggs at room temperature.

Maple Syrup: You will need half a cup of maple syrup.

Flour: You will need two cups of all purpose flour.

Baking Powder: You will need one tbsp.

Salt: You will need one tsp of salt for taste.

Vanilla Extract: You will need one tbsp.

Yogurt: You will need 3/4 cups of Greek yogurt. I used lactose-free

Vegetable Oil: You will need 1/4 cups of vegetable oil.

Lemons and Lemon Juice: You will need zest from two lemons, and lemon juice squeezed form 1 1/2 lemons.

Equipment Needed:

Spatula: For mixing.

Measuring Spoons and Cup: For accurate measurements.

Mixing Bowl: For the ingredients.

Small Bowl: For cracking your eggs.

Lemon Squeezer: For mixing.

Zest tool: For zesting the lemon

Whisk: For mixing the dry ingredients.

Loaf Pan: For the batter.

Parchment Paper: For lining the loaf pan.

Step By Step Instructions:

Step One:

Preheat your oven to 350F

Grease your loaf pan and line it with parchment paper.

Gather all your ingredients, measure everything then set aside.

Step Two:

Dry ingredients

In a mixing bowl, add your dry ingredients. Using a whisk, give the dry ingredients a quick mix to remove any lumps.

Step Three:

Wet ingredients

One at a time, add in the wet ingredients. Mix mix mix …

Step Four:

Lemon zest

Zest the lemons before squeezing the juice. Add lemon zest and juice to the batter and mix until fully incorporated.

Step Five:

Loaf Pan

Pour the batter into a greased loaf pan and place it into the oven for about 25-30 minutes.

Storing And Freezing:

Leftovers? No problem! Store the lemon loaf in an airtight container and place it in the fridge for up to five days. This delicious loaf can be stored in a freezer tight container as well. Be sure to thaw the lemon loaf at room temperature before eating.

Frequently Asked Questions?

Can I use sugar instead of maple syrup?

Yes! This recipe calls for 1/2 cup of maple syrup and replaces 1/2 cup of maple syrup for 1/2 cup for sugar instead.

Can I use lemon juice instead?

Yes! but fresh lemon juice provides a brighter, more natural flavor. If you use bottled juice, opt for a high-quality brand with no added sugar or preservatives.

What can I use instead of vegetable oil?

Coconut oil is a good alternative.
