Chocolate Chip Cookies Made With Honey
These delicious Chocolate Chip Cookies made with Honey are not too sweet, they are moist, and of course filled with an abundance of chocolate chips.
With the recent shortage of sugar here in Canada, finding brown sugar has become IMPOSSIBLE!!! Because of this, I’ve had to get a little creative with my recipes. I’ve tried apple sauce as a substitute, banana, and honey. Experimenting with all three, honey was by far my favorite substitute!
First, I started with melting the butter over the stovetop, (you can use a microwave as well, be sure to use a microwave safe bowl.) Once the butter had melted and cooled I added honey, vanilla extract, and canola oil. The canola oil is what makes the cookies moist rather than dry. Secondly, I added the wet ingredients to the dry ingredients and mixed EVERYTHING together using a handheld mixer before finally adding my chocolate chips. Lastly, I rolled out the chocolate chip cookies into small balls and placed them onto a cookie sheet and baked for about twelve minutes. Once they were baked, I pulled them out of the oven and allowed the cookies to cool. Of course, I just had to drizzle some chocolate over the cookies as well.
You will be left with A TON of left over cookie dough, simply wrap the raw cookie dough in saran wrap and place into a Ziploc bag then freeze for up to three months.
What Does Lactose Free Mean?
First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.
Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

- Butter – for this recipe I used lactose free Lactantia butter.

Recipe At A Glance:
Butter: You will need one cup of melted butter.
Honey: You will need one cup of honey. I used PC Organics – Wildflower Honey
Eggs: You will need two eggs at room temperature.
Oil: You will need two tbsp. of oil. I used Canola oil.
Vanilla Extract: You will need one tbsp.
Flour: You will need three cups of all purpose flour.
Baking Soda: You will need one tsp.
Salt: one tsp of salt.
Chocolate Chips: You will need two cups of chocolate chips. I used Hershey’s Chipits.
Equipment Needed:
Cooking Pot: For melting butter.
Spatula: For folding in your chocolate chips into the batter.
Measuring Spoons and Cup: For accurate measurements.
Mixing Bowl: For the ingredients. You will need two, one for the wet ingredients and the other for the dry ingredients.
Small Bowl: For cracking your eggs.
Handheld Mixer: For mixing.
Whisk: For mixing the dry ingredients.
Cookie Sheet: To bake your cookies with.
Parchment Paper: For your cookies.
Step By Step Instructions:
Step One:
Preheat your oven to 350F
Gather all your ingredients, place parchment paper on your cookie sheet, measure everything then set aside.
Step Two:
In a cooking pot add one cup of butter and melt. Do not boil, set aside.
Step Three:
Once the better has melted and cooled, add the butter to a mixing bowl and add one cup of honey, vanilla extract and oil, mix together using a whisk.
Step Four:
Add one egg at a time to the mixing bowl and either mix using a whisk or a handheld mixer.
I personally like to crack eggs in a separate bowl before putting them into my main mixing bowl to avoid any eggshells.
Step Five:
In a separate bowl, add in three cups of flour, salt and baking soda. Using a clean whisk, mix everything together to get rid of any lumps.
Step Six:
Add your wet ingredients to your dry ingredients and mix using a handheld mixer.
Step Seven:
Lastly, add in two cups of chocolate chips and mix together, either using a spatula or handheld mixer.
I prefer a handheld mixer, it gets the job done A LOT faster!
Step Eight:
Using a small ice cream scoop or two teaspoons, scoop out cookie dough and place them onto the cookie sheet about two inches apart.
Place the cookies into the oven and bake for about ten – twelve minutes or until they have started to brown on the bottom.
Step Nine:
Once the cookies have browned, remove them from the oven and allow them to cool for about ten minutes on the baking sheet before placing them onto a cooling rack.
Serve with a glass of milk and enjoy!
Storing These Chocolate Chip Cookies Made With Honey:
If you are like me and tend to bake WAYYYY too much of anything, you can always store left over raw cookie dough in the freezer. Simply wrap your cookie dough in saran wrap, place into a Ziploc bag and freeze for up to three months.
When storing baked cookies, completely cool the baked cookies then store into an airtight container for up to a week.
Tips And Variations:
- For more chocolate, drizzle some chocolate ganache onto your cookies.
- If you prefer to bake with sugar, replace one cup of honey, with one cup of granulated sugar.
- Lactose free butter was used in this recipe but feel free to use butter that is not lactose free.
- Do not OVER BAKE your cookies. You want them to look a little under cooked. They will continue to bake while on the cookie sheet.
