Fall has officially begun, and I, for one, am excited for the weather to start cooling down! 

Summer was great, but I am more of a fall/winter kinda gal. Thick sweaters, cuddling in warm blankets with a hot chocolate in hand, the colorful scenery, the crisp air… aaah, fall, oh, how I missed you!

Apple Pie Banana Bread:

First things first, gather your ingredients,  grease your loaf pan, preheat the oven, wash, and peel your apples. Next, you want to begin by making the apple pie sauce. In a small cooking pot, combine the chopped apples, apple pie spice, water, and butter. Simmer on low heat for 10-15 minutes. You want the apples to get soft. Combine the dry ingredients into a medium-sized bowl. Add in the wet ingredients, including mashed bananas and apple pie sauce. Finally, bake the Apple Pie Banana Bread for about 45 minutes and enjoy!

What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Apples: You will need two apples, peeled and chopped into small pieces.

Butter: You will need 1/4 cups of lactose free butter.

Water: You will need 1/4 of cold water (not pictured).

Apple Pie Spice: You will need one tbsp.

Banana Bread:

Flour: You will need two and a half cups of all purpose flour.

Brown Sugar: You will need half a cup of brown sugar.

Baking Soda: You will need one tsp of baking soda.

Greek Yogurt: You will need one cup of lactose free yogurt.

Salt: You will need one tsp of salt for taste.

Vanilla Extract: You will need one tbsp for taste.

Banana: You will need two very ripe bananas.

Eggs: You will need two eggs.

Measuring Spoons and Cup: For accurate measurements.

Mixing Bowl: For the ingredients. You will need two – one for dry ingredients and the other for the wet ingredients.

Small Bowl: For cracking your eggs.

Loaf Pan: For the Apple Pie Banana Bread batter.

Cooking Pot: For the apple sauce.

Step By Step Instructions:

Step One:

Prepare

Preheat your oven to 370F

Grease the loaf pan and set aside.

Gather all your ingredients, measure everything, and then set aside.

Chop and peel apples

Mash the bananas using a fork and set aside.

Step Two:

Apple Sauce

In a small pot, combine the peeled and chopped apples, apple pie spice, water, and butter. Simmer on low heart for about 15 minutes or until the apples begin to soften. Stir occasionally, set aside to cool.

Step Three:

Combine the dry ingredients

In a medium size bowl, combine the dry ingredients – flour, baking soda, salt, brown sugar.

Use a whisk to remove any lumps

Add the wet ingredients to the dry ingredients

In a separate bowl, add mashed banana, greek yogurt, vanilla extract, eggs to the bowl, and mix.

Pour the wet ingredients into the dry ingredient bowl – mix mix mix

Add the apple pie sauce and fold the sauce into the batter using a spatula.

Step Five:

Bake

Add the entire mixture to a loaf pan and bake for about 45 minutes or until the toothpick inserted into the center comes up clean.

Leftovers? No problem! Store the Apple Pie Banana Bread in an airtight container and place in the fridge for up to three days.

This Apple Pie Banana Bread can be stored in a freezer tight container as well.

Slice the loaf into individual slices and wrap individually. When you are ready to eat, thaw the slice at room temperature before eating.

1. What type of apples should I use?

For this recipe, I used Honeycrisp apples, but any type of apples will work.

2. What can I use instead of Greek yogurt?

If you don’t have Greek yogurt, you can use sour cream, plain yogurt, even cottage cheese. For cottage cheese, if you prefer a smooth texture blend the cottage cheese before hand.

3. How ripe should the bananas be?

The riper, the better! Overripe bananas are sweeter and create moisture to the bread.

If you do not have ripe bananas on hand, you can bake bananas in the oven for about 20 minutes until the skin turns dark.

4. I don’t have a loaf pan, what else can I use?

Not a problem! you can also turn this recipe into delicious muffins as well.

Pour the batter into lined muffin tin and bake at 350F for 20 minutes, or until a toothpick inserted into the middle comes up clean.
