Ingredients

Apple Sauce

  • 2 Apples
  • 1/4 cups Butter
  • 1/4 cups Water - cold
  • 1 tbsp Apple Pie Spice

Banana Bread

  • 2 1/2 cups Flour
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Soda
  • 1 cup Greek Yogurt
  • 1 tsp Salt
  • 1 tbsp Vanilla Extract
  • 2 Bananas the riper the better
  • 2 Eggs

Instructions

Prepare

  • Preheat your oven to 370F
  • Grease the loaf pan and set aside.
  • Gather all your ingredients, measure everything, and then set aside.
  • Chop and peel apples
  • Mash the bananas using a fork and set aside.

Apple Sauce

  • In a small pot, combine the peeled and chopped apples, apple pie spice, water, and butter. Simmer on low heart for about 15 minutes or until the apples begin to soften. Stir occasionally, set aside to cool.

Dry Ingredients

  • In a medium size bowl, combine the dry ingredients - flour, baking soda, salt, brown sugar. Use a whisk to remove any lumps

Wet Ingredients

  • In a separate bowl, add mashed banana, Greek yogurt, vanilla extract, eggs to the bowl, and mix.
  • Pour the wet ingredients into the dry ingredient bowl - mix mix mix
  • Add the apple pie sauce and fold the sauce into the batter using a spatula.

Bake

  • Add the entire mixture to a loaf pan and bake for about 45 minutes or until the toothpick inserted into the center comes up clean.

Notes

Allow the Apple Pie Banana Bread to cool before serving. Feel free to serve with a dallop of butter or for a more decadent taste - serve with vanilla ice cream.
Store the Apple Pie Banana Bread in an airtight container and place in the fridge for up to three days.
This Apple Pie Banana Bread can be stored in a freezer tight container as well.
Slice the loaf into individual slices and wrap individually. When you are ready to eat, thaw the slice at room temperature before eating.
