Blueberry Banana Bread

Start by combining the dry ingredients in a medium to large bowl (use a whisk to remove any lumps.) Next, combine the wet ingredients to the same bowl, (be sure to crack the eggs in a separate bowl to avoid eggshells falling into the batter and mash the bananas with a fork before adding to the bowl.) Mix in the blueberries and Finally, add the batter to a loaf pan and bake for about 45 minutes at 350F.

What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

To use cottage cheese in this blueberry banana bread recipe, you can either blend it smooth or leave it chunky, depending on your preference.

I went with a nice smooth, creamy finish by blending one cup of cottage cheese.

Step By Step Instructions:

Step One:

Preheat your oven to 350F

Grease your loaf pan

Mash the bananas on a separate plate or small bowl.

Gather all your ingredients, measure everything then set aside.

Step Two:
Dry ingredients

In a medium to large size mixing bowl, add flour, baking soda, and cinnamon. 

Use a whisk to remove any lumps from the flour.

Tip: crack the eggs in a separate bowl to avoid any shells falling into the batter.

Step Four:
Remainder of the ingredients

Gently fold the blueberries into the bowl using a spatula.

Pour the batter into a greased loaf pan and bake for about 45 minutes at 350F.
