Ingredients

  • 2 Eggs room temp
  • 1/2 cup Maple Syrup
  • 2 cups Flour
  • 1 cup Cottage Cheese
  • 1 tsp Cinnamon
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 tbsp Vanilla Extract
  • 2 Banana over ripe
  • 1 cup Blueberries

Instructions

  • Preheat your oven to 350F
  • Grease your loaf pan
  • Mash the bananas on a separate plate or small bowl.
  • Gather all your ingredients, measure everything then set aside.
  • In a medium to large size mixing bowl, add flour, baking soda, and cinnamon.
  • Use a whisk to remove any lumps from the flour.
  • Add the eggs, mashed banana, cottage cheese, maple syrup.
  • Gently fold the blueberries into the bowl using a spatula.
  • Pour the batter into a greased loaf pan and bake for about 45 minutes at 350F.
  • Serve warm and enjoy!

Notes

1. Use ripe bananas with almost black skin.
2. Avoid over mixing the batter.
3. Toss a small amount of flour in the blueberries to avoid sinking to the bottom of the batter.
4. Add lemon zest and juice to the batter for more of a lemon flavor.
