I LOVE a good banana bread recipe! Nothing too fancy either. I do not care for nuts, chocolate chips and so on, a simple banana bread recipe with hints of banana is all I need to be happy!

For this recipe, you will need sour cream. The sour cream is what keeps these loaves moist with every bite.

First, melt the butter in the microwave, add eggs and sugar. Next, add the remainder of the wet ingredients – sour cream, banana, vanilla extract. Mix the wet in with the dry ingredients until everything is fully incorporated. Finally, using an ice cream scoop, scoop the batter into the baking tray and bake for thirty minutes.

What Does Lactose Free Mean?

First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.

Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Which Ingredients Are Lactose Free?

  • Butter – I used Lactantia lactose free butter.
  • Sour Cream – I used lactose free Gay Lea brand.

Recipe At A Glance:

Butter: You will need half a cup of melted butter. I used lactose free butter.

Eggs: You will need two eggs at room temperature.

Sour Cream: You will need one cup. I used lactose free sour cream.

Sugar: You will need half a cup of granulated sugar.

Brown Sugar: You will need half a cup of brown sugar.

Bananas: You will need two VERY ripe bananas.

Flour: You will need one and a half cups of all purpose flour.

Baking Soda: You will need one tsp.

Salt: You will need one tsp of salt for taste.

Vanilla Extract: One tbsp. of vanilla extract.

Cinnamon: You will need one tbsp. of cinnamon.

Equipment Needed:

Spatula/Whisk: For mixing.

Measuring Spoons and Cup: For accurate measurements.

Mixing Bowl: For the ingredients. You will need two.

Small Bowl: For cracking your eggs.

Small plate: For mashing the bananas on.

Fork: To mash the bananas

Handheld Mixer: For mixing.

Step By Step Instructions:

Step One:

Preheat your oven to 345F

Gather all your ingredients, measure everything then set aside.

Mash the bananas and set aside.

Step Two:

In a microwave-safe bowl, melt half a cup of butter. Add in eggs, and sugar. Mix everything until fully combined.

Step Three:

Add sour cream, and vanilla extract to the same bowl and mix.

Step Four:

In a separate bowl, add flour, baking soda, salt and cinnamon. Mix together using a whisk to get rid of any lumps.

Step Five:

Pour the wet ingredients into the dry ingredients and mix. Add in the mashed bananas and mix until everything is fully incorporated.

Step Six:

Using an ice cream scoop, scoop banana batter into the mini loaf pan. Fill each pan about halfway, about two scoops each.

Give the mini loaf a slight bang on the counter to remove any air bubbles.

Step Seven:

Place into the oven and bake for thirty minutes before removing from the oven to cool.

Serve warm and enjoy!

Storing And Freezing Mini Banana Bread:

Leftovers? No problem, store the banana mini loaves into an airtight container and place them in the fridge for one week.

When you are ready to enjoy the banana loaf again, you can either eat it cold or better yet, warm the mini loaf in a microwave for about ten to fifteen seconds and serve with butter.

If you don’t own a mini loaf pan, you can use a bread loaf and bake banana bread instead.
