Mini Banana Bread

Ingredients

  • 1/2 cup Butter lactose free
  • 2 Eggs room temp.
  • 1 cup Sour Cream lactose free
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 2 Ripe Bananas
  • 1 1/2 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 tbsp Vanilla Extract
  • 1 tbsp Cinnamon

Instructions

  • Preheat your oven to 345F
  • Gather all your ingredients, measure everything then set aside.
  • Mash the bananas and set aside.
  • In a microwave-safe bowl, melt half a cup of butter. Add in eggs, and sugar. Mix everything until fully combined.
  • Add sour cream, and vanilla extract to the same bowl and mix.
  • In a separate bowl, add flour, baking soda, salt and cinnamon. Mix together using a whisk to get rid of any lumps.
  • Pour the wet ingredients into the dry ingredients and mix. Add in the mashed bananas and mix until everything is fully incorporated.
  • Using an ice cream scoop, scoop banana batter into the mini loaf pan. Fill each pan about halfway, about two scoops each.
  • Place into the oven and bake for thirty minutes before removing from the oven to cool.

Notes

#1: Serve the Mini Banana Loaves warm and with butter.
#2: Be sure to use SUUPERRRR ripe bananas for the best flavor, they should have brown spots all over.
#3: Mash the banana before adding them to the batter so they spread evenly into the batter.
#4: Replace sour cream with coconut milk or yogurt.
