Gather all your ingredients, measure everything then set aside.
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
Stir in the onion, ginger and garlic. Cook for 3–4 minutes until softened. Add ketchup, brown sugar, Worcestershire sauce, mustard, and chili powder. Mix well and simmer for 5 minutes. Taste and adjust seasoning.
Pour the sloppy joe mixture into the prepared baking dish. Sprinkle half of the cheddar cheese on top. Evenly layer the tater tots over the filling.
Bake uncovered for 25–30 minutes, or until the tater tots are golden and crisp.
Let it rest for 5 minutes before serving. Pair it with a fresh side salad or steamed veggies for a balanced meal.
