Ingredients

  • 2 lb shrimp peeled and deveined
  • 3 bell peppers sliced
  • 1 medium onion sliced
  • 5 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of 1 lime

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a bowl, toss shrimp, peppers, and onion with olive oil.
  • Add chili powder, paprika, garlic powder, cumin, salt, and pepper.
  • Mix until everything is evenly coated.
  • Spread the mixture onto a sheet pan in a single layer.
  • Bake for 8–12 minutes, until shrimp are pink and fully cooked.
  • Remove from the oven and squeeze fresh lime juice over the top.
  • Serve immediately with warm tortillas and toppings of choice.
