Place the hot plate onto the stove and turn the stove on to low heat. This will give your hot plate to slowly heat up as you prepare your roti.
Add water to a kettle and turn it on. In the mean time, gather your ingredients.
Using a stand mixer with a dough hook, add five cups of flour, two full squares of butter and about two-three cups of hot water then mix until the dough is soft. If the dough is dry, add more water.
After fully incorporated, rest the dough for at least ten minutes or so.
Add one cup of butter to a microwave safe bowl and place that bowl on top of the hot plate. Allow the butter to melt then take it off the hot plate and set aside.
Take your dough and start rolling out small dough balls.
Dust some flour onto a clean surface and begin rolling out the dough using a rolling pin.
Once you have a rolled out dough, add the roti to the hot plate and allow it to cook on one side.
Using your hands or a spatula, move the roti in a circular motion on the hot plate. After about five minutes flip the roti onto the other side and again move the roti in a circular motion so the roti gets cooked completely.
You will know the roti is cooked when both sides have brown spots on it.
Once the roti is cooked, place it onto a plate or in a thermal container, and brush some butter on the roti.
Repeat steps 5-7 until there is no dough left to cook.
