If you’re craving comfort food with a little Tex-Mex twist, this Homemade Cheesy Taco Pasta Bake is about to become your new family favorite. It’s loaded with tender pasta, seasoned ground beef, salsa, and plenty of gooey melted cheese. Best part? It’s easy, budget-friendly, and perfect for busy weeknights.

Homemade Cheesy Taco Pasta Bake
To begin, cook your pasta until it’s just al dente, then set it aside. Meanwhile, in a large skillet, brown the ground beef until no pink remains. Next, drain any excess fat and stir in the taco seasoning along with the diced tomatoes, salsa, corn, and beans.
Next, fold in the sour cream and a portion of the cheese to make the filling creamy and extra flavorful. Then, combine the cooked pasta with the beef mixture and transfer everything into a greased baking dish.
Finally, sprinkle the remaining cheese over the top and bake until the casserole is hot, bubbly, and golden. Once out of the oven, let it rest for a few minutes before serving—this way, each cheesy bite holds together perfectly!!!!!!!!

What Does Lactose Free Mean?
First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.
Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.

Step By Step Instructions:
Step One: Prep the oven and cook the pasta
Preheat your oven to 350F
Gather all your ingredients, measure everything, and then set aside.
Bring a pot of salted water to a boil and cook pasta until al dente. Drain and set aside.

Step Two: Brown the beef
In a large skillet, cook ground beef until browned. Drain excess fat.

Step Three: Season it up
Add taco seasoning, diced tomatoes, salsa, corn, and black beans. Let it simmer for five minutes.

Step Four: Make it cheesy
Stir in sour cream and one cup of shredded cheese. Add cooked pasta and mix until everything is coated.

Step Five: Bake
Transfer to a greased 9×13 baking dish. Sprinkle the remaining cheese on top. Bake at 375°F for 15–20 minutes, until bubbly and golden.

Step Six: Serve
Garnish with green onions or cilantro and serve hot.
