Easy Chicken Curry Recipe
First, wash and prepare all of your ingredients before cooking (this makes cooking sooo much easier). Thinly slice the onions, measure out the spices, and cut the chicken into bite-sized pieces if needed. Meanwhile, place a large pot on the stovetop and heat it over medium heat so it’s ready to go.
Next, add about 3 tablespoons of ghee to the pot. Once the ghee has melted, stir in the sliced onions and cook them until they’re soft and golden brown. Then, add the spices and cook them for about 1 minute, stirring constantly.
Tip: toasting the spices brings out their rich aroma and flavor.
Finally, add the chicken along with the water, stirring well to coat everything in the spices. Bring the mixture to a gentle simmer and cook for 30 to 40 minutes, or until the chicken is fully cooked and the curry has thickened. Garnish with fresh cilantro before serving, and enjoy it over fluffy rice with warm naan or soft roti.
Homemade Chicken curry has always been one of my favorite comfort meals. There’s just something about the taste, the flavorful sauce, and the tender chicken that makes it so satisfying. What makes this recipe even more special is that it’s one my mom taught me how to to make. Homemade Chicken Curry Tips and Variations
- Toasting the spices before adding the liquid creates a deeper, richer flavor.
- Chicken thighs stay extra juicy, but chicken breasts work well too. I generally use a whole chicken and cut it into bite size pieces.
- The curry tastes even better the next day as the flavors continue to develop.
- Instead of water, use coconut milk for a creamier texture.
- No tomatoes? Try ketchup instead!
Troubleshooting Common Mistakes
1. Chicken curry too watery?
If your curry sauce is thinner than you would like, allow it to simmer uncovered for a few extra minutes. This will help the excess liquid evaporate and allow the sauce to thicken. Additionally, make sure you are not adding too much water at the beginning, as the chicken will release some liquid while cooking.
2. Dry chicken?
Overcooking chicken can cause it to become tough and dry. To prevent this, cook the curry gently over medium-low heat and avoid boiling it too aggressively. Chicken thighs are also a great option because they stay tender and juicy during longer cooking times.
3. Curry taste bland?
A flavorful curry starts with properly toasted spices. If the spices are added and cooked too quickly, they may not have enough time to release their full flavor. Make sure to cook the onions until golden brown and allow the spices to toast for about a minute before adding the chicken and liquid.
