First, begin by preparing your dates. If they feel a bit dry or firm, soak them in warm water for about 5 to 10 minutes to help soften them. Once softened, remove the pits if needed and place the dates into a food processor along with the almond butter. Blend until the mixture becomes thick and sticky.
Next, add in the oat flour, maple syrup, vanilla extract, and salt. Continue blending until everything is well combined and the mixture forms a soft dough. If the dough feels too wet or sticky, you can add a little more oat flour. After that, stir in the chocolate chips—either by pulsing the processor a few times or folding them in by hand.
Finally, scoop out tablespoon-sized portions and roll them into balls using your hands. For best results, place the energy balls in the fridge for 15–20 minutes to firm up. Once chilled, they’re ready to enjoy! Store any extras in an airtight container in the fridge for up to a week or in the freezer for longer storage.

What Does Lactose Free Mean?
First and foremost, I try my best to incorporate lactose free ingredients in all my recipes. These ingredients can include, butter, milk, cream cheese etc. With that being said, sometimes it is hard to make an entire recipe using ALL lactose free ingredients. For example, my ice cream recipes include, condensed milk- NOT LACTOSE FREE.
Contrary to what some may believe, lactose – free is not the same as dairy free. Lactose – free still contains milk, however, there is a certain component, I believe a type of sugar (I may be wrong) where the lactose is removed from dairy, making it lactose – free. Dairy free on the other hand, contains ZERO milk. Alternatives for dairy free are almond milk, oat milk, soy milk etc. You can learn more about the differences here.
